What’s in My Beach Bag? | Island Necessities

Spring Break is upon us and the sunshine season is just a few months away! Here’s an inside source to my beach bag essentials and some tips to keep in mind as you replenish your vitamin sea!



What’s a day at the beach without a cute pair of sunnies? Sunglasses are definitely a vacation necessity for me, not only do they protect your eyes but they can be a huge fashion statement. I adore this pair of Dior dupes which I discussed in my last post (if you haven’t read it yet, check it out here!) My adorable case is from a local boutique but you may be able to find a similar one at Nordstrom.


A Good Read 

The beach is a perfect spot to dive into a good book! I’m currently loving Bossypants by Tina Fey, it seriously never fails to make me laugh. This read is perfect for some light, seaside entertainment and I would definitely recommend it. What’s your favorite book right now? Let me know in the comments below- I love new suggestions!


An Underwater Camera 

Cute photos are a MUST on any vacation but a sand/water damaged lens can definitely put a damper on any trip. That’s why I love taking my FujiFilm waterproof camera on my beachy adventures! Not only does it have a wrist strap for underwater exploring but it definitely prevents the anxieties of a ruined camera. I used this a ton on my recent vacation and it perfectly captured my snorkeling memories!


A Hat

Salty hair can get wild and a hat is definitely a beach necessity! Mine is from Vineyard Vines and it always comes in handy. It’s super important to protect your face from UV rays (and to look cute- both of which can be achieved with a hat!) If a ball cap isn’t your style, floppy sun hats are also adorable and will achieve the same fun, tropical look!


Sunscreen (duh!) 

I don’t know about you, but I’ve had my fair share of harsh sunburns. If anything, sunscreen is surely an essential if you’re spending the day with your toes in the sand. I like Neutrogena sunblock because I find that it is gentle on the skin and doesn’t give off a greasy feel. For my face I apply the Ultra Sheer stick and the Ultimate Sport Spray is perfect for my body for I know it will stay on all day. With sunscreen in your beach bag you’ll look like a bronzed babe instead of a lobster…Don’t forget to reapply!



These definitely aren’t everyone’s style but I ADORE my white Birkenstocks. These sandals are perfect for long walks to the beach because they are super durable and comfortable- not to mention cute! Complementing a tan perfectly, the white style is awesome for Spring and Summer. Yay for Birks!

Magnificent Mangos & Scrumptious Strawberries || Summer Smoothie Recipe

With this wonderful warm weather finally greeting the East Coast, I have been feeling way more motivated to get active and live a generally healthier life! I’ll be the first to say I have my fair share of ice cream and other treats, but I am starting to realize just how different I can feel with just a few adjustments to my dietary habits and daily routine (still never giving up ice cream though). This awesome mango & strawberry smoothie is a recipe I put together with some items in my fridge and it has become one of my new favorite snacks. For this recipe you will need: 

  • Naked Juice (about 1 cup)- mine is in the “power-c machine flavor.” I have never been able to get myself to try the green concoctions associated with the “juice cleanse trend” but I tried this flavor for the first time and it is seriously amazing! This particular juice includes:

All in one drink! If you don’t have time to make the whole smoothie, just drinking this juice is the perfect pick me up due to all of its Vitamin C benefits!

In addition to your Naked Juice, you will need:

  • About 4 large strawberries, washed
  • Vanilla yogurt- Mine is the Stonyfield brand.
    • You can also use strawberry yogurt or whatever your favorite flavor is, for a twist!
  • About 1/2 cup of frozen mango chunks
    • You can use fresh cut mango if preferred, if so you will definitely want to include a few extra ice cubes.
  • 2-3 ice cubes


Next you will obviously want to blend it all up! I use this awesome little Blend’N Go blender from the Oster brand. The travel cup itself screws into the base to act as the blender- this makes it super easy to make a smoothie on the run, especially for breakfast. If I’m not going anywhere however, I like to pour my smoothie into a little mason jar- mainly because it’s adorable (just think of all the Instagram opportunities) but it’s also great for storage and refrigeration (I wouldn’t save your smoothie for more than a day or two- that could get nasty).


So why would you want to make this smoothie when you can have 5 cookies instead? Well my friend, although 5 cookies would be delicious (and a bit gluttonous)- do they give you the same amazing benefits as this incredible smoothie? Heck no! This smoothie alone will give you enough Vitamin C to last the whole day, with the energy to run a mile (or stay awake at least)! In addition to this, you skin will definitely thank you.

Vitamin C has nutrients that act as a natural cure in skin related problems. By consuming fruits such as those in this recipe, you might find your skin with a natural glow. Vitamin C also aids in wrinkle and disease prevention- so that’s always cool! Instead of investing in an expensive Vitamin C infused moisturizer, try including fruits such as oranges, mangos, peaches and more into your diet, you will definitely see a difference!

Easy Easter Eats! | Carrot Cake Cupcakes

Spring is finally upon us! With Easter right around the corner and Passover in full swing I thought, what else than to do an adorable, springy recipe that can be shared with family and friends! Whether they be a holiday favorite around your dinner table or simply a midnight snack- these spring chick cupcakes are sure to be a hit, as they definitely were in my house! I wish you the best of luck on your dessert endeavor (you won’t even need luck-this recipe is seriously so simple.) Enjoy!

For these scrumptious treats you will need…

Carrot Cake cupcakes:

  • 1 1/3 cups (175 grams) of all-purposeflour
  • 1 teaspoonbaking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup (120 ml)walnuts, chopped
  • 2 largeeggs
  • 2/3 cup (135 grams) granulated whitesugar
  • 2/3 cup (160 ml) vegetable, safflower, corn, or canola oil
  • 1/2 teaspoon pure vanilla extract
  • 2/3 cup (160 ml) unsweetened applesauce (or grated apple or crushed pineapple)
  • 1 1/3 cups (320 ml) finely grated raw carrots

Cream Cheese Frosting:

  • 1/4 cup (55 grams) butter, room temperature
  • 4 ounces (115 grams) cream cheese, room temperature
  • 2 1/4 cups (250 grams) confectioners’ (powdered or icing) sugar, sifted
  • 1/2 teaspoon pure vanilla extract

Spring Chick Decorations

  • About 24 chocolate chips
  • About 1 cup of shredded coconut
  • Yellow food coloring
  • Carrot or candy corn


To make your cupcakes…

First, preheat your oven to 350 degrees F (180 degrees C) and place rack in center of oven. Then, grease your muffin pan with a nonstick spray or line it with paper liners (which I prefer because they add an adorable spring touch!)- This recipe makes about 12 cupcakes.

After this, whisk together (in a large bowl) the flour, baking soda, salt, and ground cinnamon. I opted not to, but at this time you could also fold chopped nuts or cranberries into your mix.

In another large bowl, whisk the eggs until lightly beaten. Next, mix in the sugar, oil, and vanilla extract until the batter has thickened slightly. Fold in the applesauce and grated carrots. Then fold this mixture into the dry flour mixture until evenly incorporated. Evenly fill the 12 muffin cups with the batter and bake about 20 – 23 minutes or until golden brown. Remove from the oven, place on a wire rack, and let cool completely before adding the delicious frosting.


Now onto the frosting!

With an electric or hand mixer- beat the butter and cream cheese until very smooth and creamy. Then, add the powdered sugar and beat until fully incorporated. Next, add the vanilla extract. You can then add more confectioners’ sugar if needed. Keep in mind that after frosting these cupcakes they must be kept in the refrigerator due to the cream cheese!


How to make your treats even more tempting…

To make your delicious cupcakes represent little spring chicks follow these steps! First, I piped the cream cheese frosting onto my treats, gently smoothing the tops with a butter knife to leave a flat surface to decorate on. Next, I took about a cup of shredded coconut and put it in a small ziplock bag along with about 5 drops of yellow food coloring. I zipped up the bag and shook it until the dye was evenly incorporated and the coconut was a lovely shade of spring chick! After this I sprinkled it onto the frosted cakes (gently pressing as I went to ensure each cupcake would remain coated) Following this, I pushed two chocolate chips into each cupcake to represent eyes. My final step was to include the beaks, I used some extra, fresh carrot from the cake recipe and cut it into small triangles but candy corn would work perfectly as well. Finally, admire your adorable cupcakes and pat yourself on the back- you’re basically a professional now! Enjoy (and maybe share) accordingly…


I would definitely recommend making this easy recipe at home! The cupcakes came out adorably and they tasted incredible! If you are a fan of carrot cake, this recipe will delight you! Not only was the cake extremely flavorful and moist but the frosting was light and creamy… quite enjoyable! This treat is fun and simple to bake and will make the perfect addition to any holiday meal or spring afternoon!
